The first taste of Solein in The United States

The first taste of Solein was experienced in the US on November 19, 2024. At award-winning restaurant Olmsted in New York, chef Greg Baxtrom showcased how Solein fits into dishes and how it can make foods more sustainable and nutritious, without diners even noticing the difference.

The Menu

Chef Baxtrom crafted a menu that highlights the season’s finest ingredients while giving Solein its first-ever spotlight in American cuisine. With his signature creativity, Chef Baxtrom reimagined some of his beloved dishes, demonstrating his vision of the future of food: How Solein can disappear into the dishes, working its magic without changing the dish and the flavour.

Solein® in four courses

In the dishes, Solein replaced traditional dairy products like milk and butter, as well as egg yolk, while maintaining the flavours and textures of Chef Baxtrom’s creations.
